Black Bean Brownie Recipe

Ingredients
1 ½ cups cooked black beans or 1 can black beans (rinsed,
drained, and mashed)
3 tablespoons vegetable oil or coconut oil
⅔ cup sugar
3 eggs
1 teaspoon vanilla extract
¼ cup cocoa powder
pinch of salt
½ cup semisweet chocolate chips
oil or butter for greasing
To Make
Preheat your oven to 350 F. Lightly grease an 8×8 square
baking pan.
In a mixing bowl, combine the beaten eggs, sugar, vegetable
oil, and vanilla. Mix, then add cocoa powder, salt, and
beans. Mix again, and pour mixture into the greased baking
dish. Sprinkle chocolate chips over the top of the mixture.
Bake for about 25-30 minutes, or until the top is dry and the
edges start to pull way from the sides of the pan.
